Paleo Marshmallows

You can make Paleo Marshmallows with only 2 ingredients (plus water)!
I love making these marshmallows to have on hand during hot cocoa and s’mores seasons (so basically the whole year lol). I store them in an air-tight container in the fridge so I always have them ready-to-go! Paleo Marshmallows

Paleo Marshmallows


Ingredients:

  • 1 1/2 tbsp gelatin
  • 1/2 cup warm water, divided
  • 1/2 cup honey

Directions:

  1. Mix 1 1/2 tbsp gelatin with 1/4 cup warm water in a mixing bowl.
  2. Add 1/4 cup water & 1/2 cup honey to a small saucepan. Heat on medium-high heat, whisking frequently for 5 minutes.
  3. Slowly add the honey mixture to the mixing bowl and beat on high for about 8 minutes, or until the mixture gets very fluffy and changes color from amber to white.
  4. Transfer the cream to a baking dish and spread with a spatula. Place in the refrigerator for at least 1 hour. Then slice into cubes.
  5. Store the marshmallows in the refrigerator for whenever you want them!
