Perfect for s’mores, hot cocoa, or a simple snack, they’re a healthy twist on a classic favorite. I love making these marshmallows to have on hand during hot cocoa and s’mores seasons (so basically the whole year 😉).

FAQs

Are these marshmallows keto-friendly?

Not typically, due to the honey. However, you can try using a low-carb liquid sweetener like monk fruit syrup for a keto adaptation.

Can I store these marshmallows?

Yes! Store them in an airtight container at room temperature for up to 5 days or in the refrigerator for up to 2 weeks.

Are they vegan?

No, gelatin is derived from animal collagen. Use agar-agar as a plant-based alternative, though the texture will differ.

Tips for Making Perfect Paleo Marshmallows

Bloom Gelatin Properly: Ensure the gelatin fully absorbs the water before mixing to achieve the best texture.

Use a Candy Thermometer: Heat the honey mixture to 240°F for the perfect marshmallow consistency. I honestly do not do this, but this is a sure-fire method. I just make sure to boil for roughly 5 minutes. 

Grease the Pan: Lightly grease or line with parchment paper to prevent sticking.

Dust with Arrowroot or Coconut Flour: This prevents the marshmallows from sticking together during storage.

Ingredients

  • 1 1/2 tbsp gelatin
  • 1/2 cup warm water, divided
  • 1/2 cup honey

Instructions

  • Mix 1 1/2 tbsp gelatin with 1/4 cup warm water in a mixing bowl to allow the gelatin to "bloom". It will turn into the consistency of applesauce.
  • Add 1/4 cup water & 1/2 cup honey to a small saucepan. Heat on medium-high heat, whisking frequently for 5 minutes.
  • Slowly add the honey mixture to the mixing bowl and beat on high for about 8 minutes, or until the mixture gets very fluffy and changes color from amber to white.
  • Transfer the cream to a baking dish and spread with a spatula. Place in the refrigerator for at least 1 hour. Then slice into cubes.
  • Store the marshmallows in the refrigerator for whenever you want them!
