Paleo Marshmallows

- 1 1/2 tbsp gelatin
- 1/2 cup warm water, divided
- 1/2 cup honey
Mix 1 1/2 tbsp gelatin with 1/4 cup warm water in a mixing bowl to allow the gelatin to "bloom". It will turn into the consistency of applesauce.
Add 1/4 cup water & 1/2 cup honey to a small saucepan. Heat on medium-high heat, whisking frequently for 5 minutes.
Slowly add the honey mixture to the mixing bowl and beat on high for about 8 minutes, or until the mixture gets very fluffy and changes color from amber to white.
Transfer the cream to a baking dish and spread with a spatula. Place in the refrigerator for at least 1 hour. Then slice into cubes.
Store the marshmallows in the refrigerator for whenever you want them!
