Paleo Marshmallows

These Paleo Marshmallows are fluffy, naturally sweetened treats made with grass-fed gelatin, honey, and water. Perfect for s’mores, hot cocoa, or a simple snack, they’re a healthy twist on a classic favorite.

Ingredients

  • 1 1/2 tbsp gelatin
  • 1/2 cup warm water, divided
  • 1/2 cup honey

Instructions

  • Mix 1 1/2 tbsp gelatin with 1/4 cup warm water in a mixing bowl to allow the gelatin to "bloom". It will turn into the consistency of applesauce.
  • Add 1/4 cup water & 1/2 cup honey to a small saucepan. Heat on medium-high heat, whisking frequently for 5 minutes.
  • Slowly add the honey mixture to the mixing bowl and beat on high for about 8 minutes, or until the mixture gets very fluffy and changes color from amber to white.
  • Transfer the cream to a baking dish and spread with a spatula. Place in the refrigerator for at least 1 hour. Then slice into cubes.
  • Store the marshmallows in the refrigerator for whenever you want them!
