PALEO BERRY POP TARTS

Yesterday in my stories poll, PALEO BERRY POP TARTS won, so here you go! I also got a lot of requests to see Evelyn eating, so you can watch to see her eating her first Pop Tart!
These are sweetened only with fruit (aside from the optional icing), and loaded with nutrients, making them a great breakfast or dessert! You only need 5 ingredients too!
PALEO BERRY POP TARTS (makes 4, so double if you want more!) See end of post for nut-free version.

Ingredients:
💗 1 cup pitted dates, soaked in hot water for 5 mins
💗 1 1/2 cups almond flour
💗 1 tbsp coconut oil, melted
💗 1/2 cup chopped berries, fresh or frozen
💗 1 tbsp chia seeds
Optional icing:
💗 1 tbsp coconut cream
💗 1/2 tsp honey
💗 red food coloring/sprinkles

Directions:

  1. Preheat the oven to 350 degrees and microwave the berries for 1-2 minute, or until soft. Mash with a fork and stir in the chia seeds. Let thicken.
  2. Blend together the dates, almond flour, and coconut oil. If the mixture doesn’t stick together, add 1-2 tsp of water.
  3. On parchment paper, roll out the crust into a rectangle 1/8 inch thick. Use a pizza cutter to create 8 rectangles.
  4. Add 1 tbsp of the chia jam onto 4 rectangles. Cover with the other 4 rectangles. Brush with water to soften and then use a fork to seal closed.
  5. Bake for 13-15 minutes, or until golden brown. While baking, mix together the coconut cream, honey, and food coloring, if desired. Once cooled (make sure they’re not still hot or the icing will run), spread on pop tarts and sprinkle on sprinkles. Enjoy!
