Ingredients
1 cup pitted datessoaked in hot water for 5 mins
1 1/2 cups almond flour
1 tbsp coconut oilmelted
1/2 cup chopped berriesfresh or frozen
1 tbsp chia seeds
Optional icing:
1/4 cup monkfruit powdered sugar
1/2 - 1 tbsp almond milk
natural red food coloring/sprinkles
Instructions
Preheat & Prepare the Filling
Preheat oven to 350°F.
Microwave berries for 1-2 minutes until soft.
Mash with a fork and mix in chia seeds. Let sit to thicken.
Make the Dough
Use a food processor to blend dates, almond flour, and coconut oil until the mixture sticks together.
If needed, add 1-2 tsp of water for the right texture.
Roll & Cut the Dough
Roll the dough into a rectangle on parchment paper to 1/8 inch thickness.
Use a pizza cutter to cut into 8 equal rectangles.
Fill & Seal
Spoon 1 tbsp of chia jam onto 4 rectangles.
Cover with the remaining 4 rectangles.
Brush edges with water and press with a fork to seal.
Bake
Place on a parchment-lined baking sheet.
Bake for 13-15 minutes until golden brown.
Optional Icing & Decoration
In a small bowl, whisk together powdered sugar and almond milk, 1 tsp at a time, stirring until you reach your desired consistency. Mix in food coloring, if desired.
Drizzle over cooled pop tarts and let it set before serving.
