Paleo Berry Pop Tarts

Yesterday in my stories poll, PALEO BERRY POP TARTS won, so here you go! I also got a lot of requests to see Evelyn eating, so you can watch to see her eating her first Pop Tart!

Servings: 4 pop tarts

Ingredients

  •  1 cup pitted dates soaked in hot water for 5 mins
  •  1 1/2 cups almond flour
  • 1 tbsp coconut oil melted
  • 1/2 cup chopped berries fresh or frozen
  • 1 tbsp chia seeds

Optional icing:

  • 1/4 cup monkfruit powdered sugar
  • 1/2 - 1 tbsp almond milk
  • natural red food coloring/sprinkles

Instructions

Preheat & Prepare the Filling

  • Preheat oven to 350°F.
  • Microwave berries for 1-2 minutes until soft.
  • Mash with a fork and mix in chia seeds. Let sit to thicken.

Make the Dough

  • Use a food processor to blend dates, almond flour, and coconut oil until the mixture sticks together.
  • If needed, add 1-2 tsp of water for the right texture.

Roll & Cut the Dough

  • Roll the dough into a rectangle on parchment paper to 1/8 inch thickness.
  • Use a pizza cutter to cut into 8 equal rectangles.

Fill & Seal

  • Spoon 1 tbsp of chia jam onto 4 rectangles.
  • Cover with the remaining 4 rectangles.
  • Brush edges with water and press with a fork to seal.

Bake

  • Place on a parchment-lined baking sheet.
  • Bake for 13-15 minutes until golden brown.

Optional Icing & Decoration

  • In a small bowl, whisk together powdered sugar and almond milk, 1 tsp at a time, stirring until you reach your desired consistency. Mix in food coloring, if desired.
  • Drizzle over cooled pop tarts and let it set before serving.
  • Add sprinkles if desired and enjoy!
