Ingredients

  • 1 watermelon slice Cut at least 1.5 inches thick with one flat side for stability
  • 1 frozen banana
  • 1/4 cup greek yogurt
  • 1 scoop collagen optional - Adds protein and supports skin, joints, and gut health
  • 1/4 cup cauliflower rice optional - A sneaky veggie boost that’s undetectable in flavor
  • 2-3 tsp mini chocolate chips or blueberries

Instructions

Prep the Watermelon Rind

  • Cut out the flesh of the watermelon slice, leaving the rind intact in a full circle.
  • Use a knife to make 8 small slits evenly around the edge.
  • Insert popsicle sticks into each slit so they form a circle of handles.

Freeze the Watermelon

  • Chop 1/2 cup of watermelon flesh and freeze it in an ice cube tray.

Blend the Nice Cream

  • In a high-speed blender, combine frozen watermelon cubes, frozen banana, Greek yogurt, and optional collagen and cauliflower rice.
  • Blend until thick, smooth, and creamy.

Assemble and Freeze

  • Place the flat side of the rind on a parchment-lined baking sheet.
  • Fill the watermelon rind with the nice cream mixture.
  • Top with mini chocolate chips or blueberries to mimic watermelon seeds.
  • Freeze for at least 3 hours, or until completely firm.

Slice and Serve

  • Let sit at room temperature for 5 minutes to soften slightly.
  • Slice into 8 pops and serve cold!
