- 1 watermelon slice Cut at least 1.5 inches thick with one flat side for stability
- 1 frozen banana
- 1/4 cup greek yogurt

- 2-3 tsp mini chocolate chips or blueberries
Prep the Watermelon Rind
Cut out the flesh of the watermelon slice, leaving the rind intact in a full circle.
Use a knife to make 8 small slits evenly around the edge.
Insert popsicle sticks into each slit so they form a circle of handles.
Blend the Nice Cream
In a high-speed blender, combine frozen watermelon cubes, frozen banana, Greek yogurt, and optional collagen and cauliflower rice.
Blend until thick, smooth, and creamy.
Assemble and Freeze
Place the flat side of the rind on a parchment-lined baking sheet.
Fill the watermelon rind with the nice cream mixture.
