S'mores Kefir Mousse Cups

Ingredients

For the Chocolate Mousse:

  • 1 cup plain kefir whole milk or full-fat preferred for creaminess
  • 1 cup chocolate melted (choose dairy-free or refined sugar-free if needed)

For the Layers:

  • 1/2 cup crushed graham crackers gluten-free or grain-free if needed
  • 1/4 cup mini chocolate chips
  • 1/2 cup mini marshmallows

Instructions

Melt the Chocolate

  • In a heat-safe bowl, melt the chocolate using a double boiler or microwave in 30-second increments, stirring until completely smooth.

Cool & Whisk

  • Let the chocolate cool for 2–3 minutes. Slowly whisk it into the kefir until smooth and fully blended. (Optional: add a splash of vanilla extract or a little maple syrup for extra sweetness.)

Chill the Mousse

  • Pour the mousse into a bowl, cover, and refrigerate for at least 2 hours until thickened to a pudding-like texture.

Layer the Cups

  • In small jars or ramekins:
  • Add crushed graham crackers.
  • Spoon in a thick layer of chocolate kefir mousse.
  • Sprinkle with mini chocolate chips.
  • Top with mini marshmallows.

Serve or Store

  • Enjoy immediately, or refrigerate for up to 2 days. For a toasted marshmallow twist, carefully toast the tops with a kitchen torch just before serving!
