Ingredients

  • 2 ¼ tbsp grass-fed gelatin
  • ¾ cup cold water
  • 2 ¼ cups hot water just below boiling
  • 4 –6 droppers liquid stevia to taste
  • –¼ tsp blue spirulina
  • 1 –2 tsp lemon juice optional
  • 4 graham crackers crushed
  • 8 candy fish
  • Optional: whipped cream round blue or white sprinkles

Instructions

Bloom the Gelatin

  • Sprinkle gelatin over ¾ cup cold water and let sit for 5 minutes to bloom.

Dissolve the Gelatin

  • Heat 2¼ cups hot water (not boiling). Pour over bloomed gelatin and whisk until fully dissolved.

Add Color + Sweetener

  • Mix in liquid stevia and blue spirulina, starting small and adjusting to reach your desired hue. Stir in lemon juice if using.

Chill Base Layer

  • Pour the mixture into a shallow dish and refrigerate for 2 hours until set.

Assemble the Push Pops

  • Add a spoonful of crushed graham crackers to the bottom of each push pop container.
  • Use the top of a push pop to cut 8 circles in the jello. Place one jello circle on the top of the graham cracker crumbs in each push pop.
  • Add pieces of the remaining jello on top of the circular layers.
  • Press a candy fish into the side of the container for the underwater look.

Fill & Set

  • Reheat the leftover jello gently, pour it over the layers, and refrigerate for 3 more hours until completely set.

Decorate

  • Top with whipped cream for ocean “foam,” sprinkles for bubbles, or coconut for “seaweed” if desired.
