Servings: 6 cake pops
Cake Ingredients:
- 3 eggs
- 1/2 tbsp vanilla extract
- 2 1/2 tbsp coconut oil
- 2 1/2 tbsp coconut cream (the thick part at the top of a can of chilled coconut milk)
- 3 tbsp raw honey
- 1 cup almond flour
- 1/2 tsp baking powder
Sweet Cream Cheese Filling Ingredients:
- 1/4 cup cream cheese
- 2 tsp honey
Decorations:
- 1 cup dark chocolate melted
- lollipop sticks
- candy eyes (or mini chocolate chips on white chocolate dots)
- pretzels halved
- red candy
Preheat your oven to 350°F. Lightly coat a square pan with coconut oil.
Blend together all the cake ingredients, pour into the pan, and bake for 25 minutes or until a toothpick comes out clean. Let cool.
In a bowl, mix the cooled cake with the cream cheese and honey. Use your hands to combine everything thoroughly, then roll the mixture into small balls.
Melt the chocolate in the microwave, stopping every 30 seconds to stir. Dip one end of each lollipop stick into the chocolate and insert it into a cake ball. Freeze for 10 minutes to set.
Remove the cake pops from the freezer and dip each one into the melted chocolate, ensuring they’re fully coated. Add candy eyes, red candies for noses, and pretzel halves for antlers.
Place the decorated cake pops on a parchment-lined tray and refrigerate until the chocolate is firm. Enjoy!
