Servings: 18 cheesecake eggs
- 1/2 cup dark chocolate melted
- 16 oz cream cheese softened
- ½ cup full-fat Greek yogurt
- ⅓ cup maple syrup or honey adjust to taste
- 2 tbsp unflavored collagen powder
- 2 tsp lemon juice
- 2 tsp vanilla extract
Pour melted dark chocolate into silicone easter egg molds and use a spoon to spread out to cover the entire egg. Repeat with the remaining eggs. Hold the mold up to the light to find any bare spots. Cover with more chocolate and then place in the freezer to set.
In a large bowl, beat cream cheese until smooth. Add Greek yogurt, maple syrup, lemon juice, vanilla extract, and collagen powder.
Carefully remove chocolate Easter Eggs. Scoop the cheesecake filling into the eggs and gently smooth. Place in the refrigerator until ready to serve.
