Pumpkin Spice Truffles

- 1 cup pumpkin puree
- 1/4 cup plain kefir
- 1/2 cup peanut butter (or any nut butter of choice)
- 2 tbsp maple syrup or honey
- 1 tsp pumpkin pie spice
- 2 tbsp coconut flour
- 1/2 cup white chocolate chip
- optional: natural colorant, sprinkles, candy eyes
In a bowl, mix together the pumpkin puree, plain kefir, peanut butter, maple syrup (or honey), pumpkin pie spice, coconut flour until smooth and well combined. Place in the fridge for 15 minutes.
Roll into balls and place on a baking sheet lined with parchment paper in the freezer until frozen.
Dip in the melted chocolate (stir in natural colorant, if wanting to make colored chocolate). Use a fork to remove from the chocolate and place on the baking sheet lined with parchment paper. If desired, add sprinkles and a candy eye to turn into a monster. Enjoy!
