Pumpkin Spice Truffles

These Pumpkin Spice Truffles are a fun, healthy treat that brings all the fall flavors in a single bite.

Ingredients

  • 1 cup pumpkin puree
  • 1/4 cup plain kefir
  • 1/2 cup peanut butter (or any nut butter of choice)
  • 2 tbsp maple syrup or honey
  • 1 tsp pumpkin pie spice
  • 2 tbsp coconut flour
  • 1/2 cup white chocolate chip
  • optional: natural colorant, sprinkles, candy eyes

Instructions

  • In a bowl, mix together the pumpkin puree, plain kefir, peanut butter, maple syrup (or honey), pumpkin pie spice, coconut flour until smooth and well combined. Place in the fridge for 15 minutes.
  • Roll into balls and place on a baking sheet lined with parchment paper in the freezer until frozen.
  • Dip in the melted chocolate (stir in natural colorant, if wanting to make colored chocolate). Use a fork to remove from the chocolate and place on the baking sheet lined with parchment paper. If desired, add sprinkles and a candy eye to turn into a monster. Enjoy!
