- ¾ cup dates soaked in hot water 10 minutes, drained and excess water squeezed out
- ½ cup peanut butter
- ⅓ cup kefir
- ⅓ cup almond milk
- 1 cup melted dark chocolate
- flaky sea salt optional
Make the Caramel Filling – Blend the dates, peanut butter, kefir, and almond milk until smooth.
Scoop and Freeze – Use a small ice cream scoop to portion the mixture onto a parchment-lined baking sheet. Freeze for at least 3 hours, or until firm.
Coat in Chocolate – Dip each frozen caramel disk into melted chocolate using a fork. Place on a parchment-lined sheet. Sprinkle on sea salt, if desired, before the chocolate sets.
Chill and Enjoy – Refrigerate until the chocolate is set. Store in the fridge until ready to serve.
