No Bake Fruit Pizza

The fruit pizza is made with a sweet crust, followed by a layer of creamy icing, topped with fruit.

Ingredients

  • 2 cups pitted dates, soaked in hot water for 5 minutes
  • 3 cups almond flour
  • 2 tbsp coconut oil, meltedIcing:
  • 1 package Mori-Nu Plus Fortified Tofu (12.5 oz)
  • 3 tbsp maple syrup
  • 1 tsp vanilla
  • Toppings: Chopped fruit

Instructions

  • Process together all of the crust ingredients until completely broken down, stopping occasionally to scrape down the sides. Spread out over a jelly roll pan (using a rolling pan or glass helps!).
  • Blend together the icing ingredients and spread out over the crust. Place in the refrigerator while cutting fruit.
  • Arrange the fruit on top of the icing and enjoy! Store leftovers in the refrigerator.
