No Bake Fruit Pizza
The fruit pizza is made with a sweet crust, followed by a layer of creamy icing, topped with fruit.

- 2 cups pitted dates, soaked in hot water for 5 minutes
- 3 cups almond flour
- 2 tbsp coconut oil, meltedIcing:
- 1 package Mori-Nu Plus Fortified Tofu (12.5 oz)
- 3 tbsp maple syrup
- 1 tsp vanilla
- Toppings: Chopped fruit
Process together all of the crust ingredients until completely broken down, stopping occasionally to scrape down the sides. Spread out over a jelly roll pan (using a rolling pan or glass helps!).
Blend together the icing ingredients and spread out over the crust. Place in the refrigerator while cutting fruit.
Arrange the fruit on top of the icing and enjoy! Store leftovers in the refrigerator.
