- 1/3 cup cashew butter (or preferred nut/seed butter)
- 1/3 cup almond flour
- 3 tbsp vanilla protein powder
- 2 tbsp maple syrup
- 1/4 tsp almond extract (optional)
- 1 cup white chocolate melted
- natural orange sprinkles
- mini dark chocolate chips
- 1 tbsp dark chocolate melted
In a bowl, mix together cashew butter, almond flour, protein powder, maple syrup, and almond extract.
Roll the mixture into 5-6 balls and chill in the fridge for about 15-20 minutes to firm up.
Melt the white chocolate by microwaving in 30-second intervals, stirring each time until smooth.
Spread a small circle of melted white chocolate on a parchment-lined baking sheet.
Dip each cake ball in the melted white chocolate, shake off any excess, and place on the chocolate circle. Repeat with each ball.
Add mini chocolate chips and an orange sprinkle to each “melted snowman” for eyes, nose, and buttons.
Chill until set, then use melted dark chocolate and a toothpick to draw eyes and a mouth.
