Ingredients

Cake Batter:

  • 6 eggs
  • 1 tbsp vanilla extract
  • 1/3 cup coconut oil melted
  • 1/3 cup coconut cream melted
  • 2/3 cup raw honey
  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking powder

Cream Cheese Icing:

  • 8 oz cream cheese
  • 3 tbsp butter melted
  • 3 tbsp maple syrup
  • 1 tsp vanilla
  • beet powder (or other natural dye) optional

Instructions

Prepare the Batter:

  • Blend the eggs, vanilla, coconut oil, coconut cream, and honey until smooth. Add almond flour, coconut flour, and baking powder. Mix until combined.

Bake the Cake:

  • Divide batter evenly between a greased 8-inch round pan and an 8-inch square pan. Bake at 350°F for 25-30 minutes or until a toothpick inserted comes out clean. Cool completely.

Create the Heart Shape:

  • Cut the round cake in half.
  • Position each half against two adjacent sides of the square cake to form a heart.

Make the Frosting:

  • While the cake is cooling, blend cream cheese, melted butter, maple syrup, and vanilla until smooth.

Assemble and Decorate:

  • Spread frosting over the entire cake, covering the seams. Decorate as desired.
