Ingredients

Cupcake Ingredients:

  • 6 eggs
  • 1 tbsp vanilla extract
  • 1/3 cup coconut oil melted
  • 1/3 cup coconut cream melted
  • 2/3 cup raw honey
  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking powder

Cream Cheese Icing Ingredients:

  • 8 oz cream cheese
  • 3 tbsp butter melted
  • 3 tbsp maple syrup
  • 1 tsp vanilla
  • Natural food colorant optional

Instructions

Prepare the Oven:

  • Preheat the oven to 350°F and line a cupcake pan with 16 liners.

Mix the Batter:

  • Blend eggs, vanilla, coconut oil, coconut cream, and honey until smooth.
  • Add almond flour, coconut flour, and baking powder. Mix until combined.

Shape the Cupcakes:

  • Divide batter evenly into liners.
  • Insert a small foil ball (½” diameter) between the pan and liner to create a heart shape.

Bake:

  • Bake for 20 minutes or until a toothpick comes out clean.
  • Cool cupcakes completely before frosting.

Prepare the Frosting:

  • Blend cream cheese, butter, maple syrup, vanilla, and optional food colorant until smooth.

Decorate:

  • Frost the cupcakes and add sprinkles or other decorations.
