Gluten Free Animal Crackers

These animal crackers are free of gluten and refined sugars, but you would never know! They're just as delicious and crunchy as the childhood favorite!

Ingredients

  • 5 tbsp grass-fed butter softened
  • 1/3 cup monkfruit or coconut sugar
  • 2 tbsp raw honey
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 cup gluten-free 1:1 flour
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon

Instructions

  • Preheat the oven to 325F.
  • Using a mixer, beat the butter and sugar together. Then mix in the honey, yolk, and vanilla extract. Finally add the flour, baking soda, and cinnamon and mix.
  • Roll out the dough between two pieces of parchment paper (or silicone baking mat) to 1/4 inch thickness.
  • Cut shapes in the dough with the cutters and then gently press down on the middle button to add the design. Carefully remove the cutter and repeat. Once the dough is completely covered with animal shapes, remove the excess dough with a butter knife.
  • Bake for 8 minutes. While baking, roll out the leftover dough and repeat steps 2 and 3. Continue repeating until all of the dough is cut into shapes.
  • Let cookies cool (they get more crispy as they cool) and enjoy! These are best stored in an air-tight container on the counter).
