Fudgy Chickpea Brownies (sweetened with dates)

These brownies are so incredibly fudgy and delicious, you would never know they are sweetened with fruit and full of protein!

Ingredients

  • 1 can chickpeas drained and rinsed
  • 1 cup pitted dates soaked in hot water for 5 minutes
  • 1/2 cup peanut butter
  • 1/3 cup cacao powder
  • 1/3 cup unsweetened applesauce
  • 1 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder

Instructions

  • Preheat the oven to 350 degrees F. Lightly grease an 8x8 baking dish.
  • Add all of the ingredients (except chocolate chips) to a food processor and process on high until smooth, stopping occasionally to scrape down the sides.
  • Use a spatula to spread the batter out onto the baking dish. Bake for 25 minutes.
  • Cool completely and then cut into bars. Store in the refrigerator.

Notes

These are best stored in an air-tight container in the refrigerator.
