Ingredients
For the Gluten-Free Waffle Cones (makes 7 cones):
1egg
1tspvanilla extract
3tbspbuttermelted
1/3cupcoconut sugar
1/2cupnut milk
2/3cupgluten-free cup-for-cup flour
For the Filling:
Assorted fresh fruit (such as berries, grapes, and clementines)
Instructions
In a mixing bowl, whisk together the egg, coconut sugar, vanilla, and melted butter until smooth. Gradually add the gluten-free flour and nut milk, stirring until the batter is thick and well combined.
Preheat your waffle cone maker. Scoop about 1/4 cup of batter onto the center and close tightly. Cook for about 2 minutes or until the waffle starts to brown.
Carefully remove the hot waffle and immediately wrap it around a cone roller, holding until it sets and cools. Repeat with the remaining batter.
Once cooled, fill each cone with a mix of your favorite fruits, arranging them to create a colorful, overflowing look.
