Ingredients

For the Gluten-Free Waffle Cones (makes 7 cones):

  • 1 egg
  • 1 tsp vanilla extract
  • 3 tbsp butter melted
  • 1/3 cup coconut sugar
  • 1/2 cup nut milk
  • 2/3 cup gluten-free cup-for-cup flour

For the Filling:

  • Assorted fresh fruit (such as berries, grapes, and clementines)

Instructions

  • In a mixing bowl, whisk together the egg, coconut sugar, vanilla, and melted butter until smooth. Gradually add the gluten-free flour and nut milk, stirring until the batter is thick and well combined.
  • Preheat your waffle cone maker. Scoop about 1/4 cup of batter onto the center and close tightly. Cook for about 2 minutes or until the waffle starts to brown.
  • Carefully remove the hot waffle and immediately wrap it around a cone roller, holding until it sets and cools. Repeat with the remaining batter.
  • Once cooled, fill each cone with a mix of your favorite fruits, arranging them to create a colorful, overflowing look.

Notes

These fruit-filled cones are best served fresh. Arrange on a platter as an edible centerpiece!
