Ingredients

  • 5 clementines peeled and separated into segments
  • 5 tablespoons whole milk plain kefir
  • 1 tablespoon pure maple syrup plus more to taste

Instructions

  • Arrange the clementine segments in a single layer on a parchment-lined tray.
  • Freeze for at least 4 hours, or until completely frozen.
  • Add the frozen clementines to a high-powered blender or food processor and pulse several times to break them into small pieces.
  • Add the kefir and maple syrup.
  • Blend until smooth, thick, and creamy, scraping down the sides as needed.
  • Taste and add additional maple syrup if desired.
  • Serve immediately for a soft-serve texture or freeze for 30–60 minutes for a firmer sorbet.
