Cookie Monster Yogurt Bark
This gluten-free Cookie Monster Yogurt Bark is made with creamy yogurt, blue spirulina, mini chocolate chips, and gluten-free cookie crumbles.

- 2 cups yogurt
- 12 mini chocolate chips
- 3 dark chocolate disks or circles of melted dark chocolate placed in the freezer to set
- 1 tsp blue spirulina
- 3 cookies
Make 12 eyes by adding a mini dark chocolate chip to the middle of a dot of yogurt placed on a baking sheet lined with parchment paper. Place in the freezer for at least 10 minutes to harden. (You can also use candy eyes and skip this step)
Mix together the remaining yogurt with blue spirulina until desired hue. Spread out over a baking sheet lined with parchment paper.
Cut chocolate disks in half. Make faces with 2 eyes and half a chocolate disk. Add cookie crumbles into the empty spaces.
Place in the freezer for at least 2 hours to set. Once frozen, cut into pieces and enjoy immediately (they melt!)
