- 1 cup full-fat coconut milk
- 1/2 cup pitted dates
- 1/2 cup cacao powder
- 2 sheets puff pastry
- optional: powdered monk fruit sweetener
Prepare the Chocolate Spread
Heat the coconut milk and dates in a saucepan over medium heat. Once it reaches a boil, reduce to a simmer for about 15 minutes, then remove from heat and cool. Transfer to the fridge to cool quickly.
Blend the coconut milk and dates until smooth, then add cacao powder. If the mixture seems thick, add a little more coconut milk to reach a spreadable consistency.
Shape the Puff Pastry Tree
Preheat your oven to 400°F. Roll out the puff pastry sheets on a silicone mat or parchment paper, smoothing any creases.
Place one pastry sheet over the other. Cut a tree shape through both layers of puff pastry, and use any excess dough to cut out star shapes.
Assemble the Tree
Spread the chocolate filling evenly over one puff pastry tree. Lay the second puff pastry sheet over the first, aligning the edges.
Starting at the base, cut 1-inch horizontal lines on each side, leaving the center intact for the “tree trunk.” Twist each section to create branches and place stars on the sheet.
