Hamburger Cupcakes
Ingredients
Paleo Vanilla Cupcake Ingredients:
- 6 eggs
- 1 tbsp vanilla extract
- 1/3 cup coconut oil melted
- 1/3 cup coconut cream the thick part at the top of a can of chilled coconut milk, melted
- 2/3 cup raw honey
- 2 cups almond flour
- 1/4 cup coconut flour
- 1 tsp baking powder
Cream Cheese Icing Ingredients:
- 8 oz cream cheese
- 3 tbsp butter melted
- 3 tbsp maple syrup
- 1 tsp vanilla
- natural yellow and red dye
Avocado Brownie Ingredients
- ⅔ cup mashed avocado
- 1/2 cup cacao powder
- 3/4 cup coconut sugar
- 1/4 cup nut butter
- 2 eggs
- 2 tsp vanilla extract
- 1 tsp baking powder
- 1/4 cup almond flour
- 1/4 tsp sea salt
- 1/2 cup dark chocolate chips optional
Other Ingredients
- 2 tbsp shredded coconut
- natural green dye
- 6 strawberries
Instructions
- Preheat the oven to 350F. Line a cupcake pan with 16 cupcake liners and lightly grease an 8 x 8 baking dish.
Make the cupcakes
- Blend together the eggs, vanilla, coconut oil, coconut cream, and honey until smooth. Add in the flour and baking powder and mix together.
- Divide the batter evenly between the 16 cupcake liners. Bake for 20 minutes, or until a toothpick comes out clean.
Make the brownies
- In a food processor, process everything, except the chocolate chips, together until smooth.
- Mix in the chocolate chips, if desired, and spread out in the baking dish. Bake for 25 minutes.
Assemble the cupcakes
- While the cupcakes cool, mix together the icing ingredients. Dye half of the icing yellow and half red for mustard and ketchup.
- Dye coconut green for lettuce
- Slice a vanilla cupcake to make buns.
- Cut brownies into circles with a diameter similar to the cupcakes to make a burger
- Slice strawberries for tomatoes.
- Layer the bottom half of the cupcake "bun", brownie "burger", icing "ketchup and mustard", strawberry "tomatoes", coconut "lettuce", and top of cupcake "bun"
- Top with sesame seeds, insert a toothpick and enjoy!
