If you really want to impress Santa this year, leave out these Milk and Cookie Cups! A cookie shaped like a cup, lined with chocolate, and filled with milk is the perfect treat!
I used a popover silicone mold to make the cookie cups, but you could also make shorter ones in a muffin mold. Not only does the chocolate lining the cup add a great flavor and crunch, but it also prevents the milk from soaking into the cookie getting it soggy. I definitely recommend not skipping that step!
Paleo Milk and Cookie Cups
Santa's new favorite treat are these Milk and Cookie Cups! A cookie cup, lined in chocolate, filled with milk, makes a delicious dessert!

Ingredients
For the cookie cups
- 1 1/2 cups almond flour
- 1/4 cup almond butter
- 1/2 cup coconut sugar
- 1 egg
- 2 tbsp nut milk
- 1 tsp vanilla extract
- 1/4 cup tapioca flour
- 1 tsp baking powder
- 1/4 cup mini chocolate chips
Other ingredients
- 1 cup nut milk
- 1/2 cup paleo dark chocolate melted
Instructions
- Preheat the oven to 350F and lightly grease a popover silicone mold.
- Mix together all of the cookie ingredients. Add approximately 2 tsp of dough to each cup in the pan. Use a spoon to spread up along the sides. Bake for 15-17 minutes, or until golden brown.
- Carefully use a spoon to push the cookie that rose from the bottom of the pan to the sides to make the cup have a bigger opening. Place in the refrigerator to cool and melt the chocolate in the microwave, stirring every 30 seconds.
- Once cool, add about 2 tsp of melted chocolate to each cookie cup. Use a spoon to spread the chocolate along the interior and the rim of the cup. Place in the refrigerator to harden.
- Pour milk into the cups and enjoy!
