St. Patrick’s Day Magical Cookies

Did you know that when you bake sunflower butter and baking soda together, they turn a beautiful green color?? It’s such a fun science experiment to do with the kiddos and the cookies are perfect for St. Patrick’s Day! 

The cookies turn green because of a chemical reaction between baking soda and the chlorophyll in sunflower seeds. When the two react, they form a vibrantly green color when the cookies cool!

These magical cookies turn green once baked and cooled! This is a fun recipe to make with the kids for St. Patrick's Day!

Ingredients

  • 1/4 cup sunflower seed butter
  • 1/4 cup peanut butter
  • 1/4 cup applesauce
  • 1 1/4 tsp stevia drops
  • 1 tsp vanilla
  • 1 egg
  • 3/4 tsp baking soda (make sure it’s not old or the chemical change won’t work)
  • 1/4 cup coconut flour
  • 1 tbsp mini chocolate chips (or more 😉)

Instructions

  • Preheat the oven to 350 degrees F and line a baking sheet with a silicone baking mat.
  • Mix together the sunbutter, peanut butter, applesauce, stevia, vanilla, and egg until smooth. Then mix in the remaining ingredients.
  • Use a tablespoon cookie scoop to add the dough onto the baking sheet. Bake for 9-10 minutes, or until a toothpick comes out clean. (If the cookies don’t bake long enough, they won’t turn green) Let cool before removing with a spatula.
  • Once cooled, the inside of the cookie will be green! If you put the cookies in a container in the fridge, the entire cookie will turn green!
