These peanut butter rice cakes are the perfect treat to satisfy a sweet tooth! They're so quick and easy to make and taste amazing!

Ingredients

  • 1 1/2 tbsp peanut butter
  • 1 rice cake
  • 1/2 cup pitted dates, soaked in hot water for 5 minutes
  • 1/4 cup room temp almond milk
  • 3 tbsp dark chocolate, melted
  • 1/2 tsp coconut oil
  • sprinkle coarse sea salt

Instructions

  • Blend together the dates and almond milk until smooth and creamy.
  • Top the rice cake with peanut butter, then the date caramel, and finally topping with the chocolate mixed with coconut oil. Sprinkle on sea salt and place in the freezer to harden.
