I asked the kids what they wanted for dinner on Halloween and this Monster Pasta was their request! This Monster Pasta is really Broccoli Spinach Pesto topped with mozzarella & olive eyeballs.The kids love the pesto and think it’s so fun with the “eyeballs”! I love that it’s loaded with green veggies and takes about 15 minutes to make.
The pesto is also great for meal prep! We often make a double batch and freeze small containers so we have a healthy dinner ready-to-go!
Monster Pasta
This Monster Pasta is made of pesto pasta, mozzarella balls, and olives. It's the perfect Halloween dinner!

Ingredients
- 1/2 cup raw cashews
- 1/2 cup packed fresh basil
- 1 1/4 cups steamed broccoli (1/2 of a 12oz bag of frozen broccoli)
- 1 cup packed kale or spinach
- 1/2 cup + 2 tbsp olive oil
- 1 tsp lemon juice
- 2 tsp minced garlic
- 1/2 tsp sea salt
- 1/4 tsp pepper
Other ingredients:
- 1 lb pasta
- mozzarella balls
- olives
Instructions
- Cook pasta according to package directions.
- Meanwhile, blend together all of the sauce ingredients.
- Once pasta finishes cooking, combine with sauce. Add mozzarella balls topped with olive slices. Enjoy!
