These Paleo Vanilla Donuts are perfect for celebrating any birthday! They are made with my go-to paleo vanilla cake batter and topped with sprinkles to add to the party!

The donuts are made with two grain-free flours to get the perfect fluffy texture! This recipe can be made into cake, cupcakes, or donuts. I used my go-to donut mold to make these tasty treats!paleo-vanilla-cupcakes3I added ifiProvisions rainbow sprinkles. I love that they are dyed naturally!

Ingredients

Cupcake Ingredients:

  • 6 eggs
  • 1 tbsp vanilla extract
  • 1/3 cup coconut oil, melted
  • 1/3 cup coconut milk
  •  2/3 cup raw honey
  • 1 tsp apple cider vinegar
  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking powder

Vanilla icing ingredients:

  • 1/2 cup coconut butter, melted
  • 1/2 cup coconut cream, melted
  • 1/4 cup maple syrup
  • 2 tsp vanilla extract

Instructions

  • Preheat the oven to 350F. Lightly grease 2 silicone donut molds.
  • Blend together the eggs, vanilla, coconut oil, coconut milk, honey, and apple cider vinegar until smooth. Add in theflour and baking powder and mix together.
  • Divide the batter evenly between the 12 donut molds and bake for 20 minutes, or until a toothpick comes outclean.
  • While baking, mix together icing ingredients in a shallow bowl.
  • Once cool, dip the donuts in the melted icing and place in the refrigerator for 10 minutes to firm. Add sprinkles, if desired, and enjoy! Friday night the kids get to pick dinner, and it’s almost always quesadill
