These No Bake Pumpkin Fudge Bars are sweetened only with fruit but you would never know! I’ve been making them for years and they’re always a fall favorite in our house!

I sweeten a lot of my recipes with dates because they’re chock-full of nutrients and antioxidants (which we could all use this time of year)! They add a naturally sweet, caramel-like flavor. If your dates are not already soft, simply soak them in hot water for 5 minutes and squeeze out the excess water.

Ingredients

For the crust:

  • 1 cup almond flour
  • 1 cup pitted dates, softened
  • 1 tsp cinnamon

For the filling:

  • 1 cup pitted dates, softened
  • 1 cup pumpkin purée
  • 1 cup almond butter
  • 2 tsp pumpkin pie spice
  • 1 tsp maca powder
  • pinch of sea salt

Optional:

  • melted chocolate

Instructions

  •  If your dates are not already soft, simply soak them in hot water for 5 minutes and squeeze out the excess water.
  • In a food processor, process together all of the crust ingredients until smooth, stopping occasionally to scrape down the sides. (If not sticking together, add 1/2-1 tsp water.) Press on the bottom of an 8 inch square baking dish lined with parchment paper.
  • Process together all of the filling ingredients (except the toppings) until smooth, stopping occasionally to scrape down the sides. Spread out over the crust. Cover and place in the freezer for at least 3 hours.
  • Thaw on the counter for a couple of minutes before slicing into bars. Drizzle on chocolate (if desired) and serve immediately!
