Ingredients

  • 2 cups frozen chopped spinach
  • 2/3 cup unsweetened nut milk
  • 2 tbsp cashew butter
  • 3/4 tsp peppermint extract (or 6 mint leaves)
  • 4 chopped frozen bananas
  • 2 scoops vanilla protein powder
  • 3 tbsp cacao nibs or dark chocolate chips

Instructions

  • Blend together the spinach, nut milk, cashew butter, and peppermint until completely broken down.
  • Add the bananas and protein powder and blend until smooth. Be careful not to blend too long.
  • Mix in the cacao nibs and enjoy immediately as soft serve or place in the freezer to harden.
